Chocolate Chip Cookies

Ingredients

2C All Purpose Flour
1/2t Baking Soda
1/2t Salt
3/4C Unsalted Butter, melted
1C Brown Sugar, packed
1/4C White Sugar
1/4C honey
1T Vanilla Extract
1 Egg
1 Egg Yolk
2C (120z) Semi-Sweet Chocolate Chips
Method:

  1. Preheat oven to 325F
  2. Grease cookie sheets or use parchment/silpat. I use parchment paper.
  3. Melt the butter if you haven’t, already.
  4. Sift the flour, salt, baking soda together in one bowl.
  5. Mix the sugars, honey, butter in a mixer and mix it up a bit.
  6. Add the egg, yolk, and vanilla. Mix until creamy.
  7. Add the dry ingredients. Mix just until blended or you’ll end up with chocolate chip bricks.
  8. Fold in the chocolate chips. Again… just until the chocolate is in the dough.
  9. Stick the dough in the fridge for 30 minutes.
  10. Spoon out onto a cookie sheet. I use a scooper that’s about 1/6C. Don’t ask. I don’t know. 1/4C should work, too.
  11. Bake for 15-17 minutes. In my oven, I leave them for 18 minutes.
  12. Remove from oven and let sit on the cookie sheet for at least another 10 minutes. If you try to move them before then, they’ll fall apart.

All-day Spaghetti Meat Sauce

My birthday is right around the corner. The tradition in our family is to tell Mom what you want for dinner and dessert and it magically appears on the table when we all get together to celebrate that birthday. This year, I decided to do things at my place. That kinda means that I have to cook. Oh, the humanity!

I decided on Lasagna with garlic bread for dinner. I want carrot cake for dessert. Some will say they don’t go together. Carrot cake goes with everything when it’s this good. :)

I make my spaghetti sauce the old-fashioned way. I add a bit of this, some of that, mix in more of that, and then let it simmer all day. I’ll be estimating measurements for the “recipe” so those that want to follow along can.

Grown-Up Macaroni and Cheese

First, I need to give credit… I didn’t make this one up. Got this recipe at browneyedbaker.com.

It’s Mac and Cheese, but with some things that make it appeal to adults, too.

First off, IT HAS BACON! It also has some more “sophisticated” cheese in it. This isn’t just cheddar and parmesan, folks.
